“I wish to express my gratitude to the Joseph Seridis Trust Fund for assisting me with the purchase of a new oven.
I had been without an oven for six months, making meal preparation extremely problematic for both myself and my carers (there is only SO much you can cook with a microwave oven!)
I had found myself eating some pretty uninspiring and unbalanced meals and not looking forward to each evening meal……blurgghhh!
Now I am preparing much healthier and nutritious meals, AND actually looking forward to my meals. I have cooked sausage rolls (ok, so not that healthy…..), Carrot and Banana Cake (ditto… but it does have carrot in it!), Sweet and Sour Meatballs (a good deal healthier …..) and a roast pork with vegetables. Yummmm!!!!
